Baked Kale Chips: Who would have thought that kids would even think this was good. I called it a green potato chip. There are several recipes for these that include different spices and some that include cheese. The trick is to use a spray bottle with the olive oil because you don't need much. Make sure you use parchment paper, it comes out better than with foil. You will probably eat the whole first batch so at $1.49/bunch of kale you can make two bunches and store it in an airtight container. Great school snack.
Bolthouse Farms: Green GoodnessSmoothie: This drink is a blend of 20 different ingredients including apple, mango, kiwi and GASP.....spinach. This drink is high in sugar because of all of fruits that are used. It is a great 4-8 ounce drink to have as an adult and an 8 ounce drink for kids. It is vegan, gluten free, sweetened with fruit and High in Vitamins A and C. I use it in my Nutriblast with some added flaxseed and nuts for more protein or put protein power in it for a morning drink. It is best to have fruit drinks and fruit in general at a separate time apart from our meals and the earlier in the day the better in order to burn off the sugar. Mrs Sheets Cafe this year really did not have a theme. I served the students some of the previous favorite foods from past cafes. I am finding that my students really enjoy this lesson even though it only happens once a year starting in 3rd grade.
This year we had three favorites so far that surprised me. One was Baked Kale Chips, the other Green Goodness Smoothie and finally my Cranberry Salsa recipe.
Cranberry Salsa: My recipe: 12 ounces of Cranberries fresh, 1 large granny smith apple peeled and cored, 1/2 large sweet red pepper, seeded and cut into chunks, 1/2 medium red onion, 3/4 cup of sugar, 1/3 cup of apple juice, 3 tbsp chopped cilantro or squeeze bottle kind. 1 tsp lime zest, 2 TBSP of picked jalapenos chopped (I omit this when serving to students)
1. In food processor chop/blend cranberries, apple, pepper and onion so that they are chunky like salsa.
2. In separate bowl, stir together sugar, apple juice, lime zest, cilantro and jalapeno is using
3. Add cranberry mixture and mix well to blend. (Lasts about 4-5 days unless everyone eats it in one sitting...this always happens at my house).
I also served Quinoa Pasta shells with Mario Batoli Tomato Basil Sauce: (They love this) I just saw that he does Gelato now....I gotta try this!!!! Let me know if you do first!
The other big hit was Italian Ice Cream or GELATO. I love the Talenti brand but it is made a facility that has nuts. I did bring some from Costco and the students loved it. (Costco can also not guarantee that their gelato has been at a facilty of not but you get a larger quantity for the money then you do with Talenti. (Try the Double Chocolate...AMAZING)
